Summer is upon us and it’s the perfect time to finally reconnect with friends, food, and fun! Join us in supporting Shelter Inc.’s mission help children build safer, healthier and brighter futures while learning how to impress your guests with a delicious and dazzling culinary display that is actually quite simple to put together.

Executive Chef Chris Blackburn of Great Full Plate will demonstrate how to prepare and plate an elevated summertime classic that combines a familiar, fresh summer salad in a pinwheel of smoky, mesquite roasted chicken. It’s the best flavors of the summer season all tied up in a pretty little bow – literally, we’ll be using cooking twine!

Participants can use the ingredients listed below and items from their pre-ordered Boxed Parties to create the dish at home, or kick back and enjoy the live chef’s demonstration while sipping a summer cocktail.

Chicken Caprese Roulade

This dish features perfectly ripe heirloom tomatoes, basil pesto, and melted mozzarella cheese stuffed inside a chicken breast glazed with balsamic vinegar and a kiss of smoked salt – all elegantly rolled into a roulade on a bed of fresh artisan greens.

1 large heirloom tomato
2 oz fresh mozzarella

2 garlic cloves
2 cups arugula
2 oz parmesan cheese
